How it all started

Owen and his father-in-law, Steve, developed a love for maple syrup early on. Both of them had spent most of their lives producing maple syrup using backyard evaporators. By 2019 they were ready to turn their love of Maple syrup into a legitimate diversification for the business.
They purchased an older evaporator, reverse osmosis, and accompanying equipment that were installed in a renovated section of an old storage barn on the farm and a tubing system was installed with 800 taps complete with vacuum.

How it’s going now

By 2024 the maple business has grown to nearly 8,000 taps. A grant through NYSERDA allowed them to upgrade the evaporator and reverse osmosis to a modern, efficient setup with room to grow. Also, in 2024, monitors were added to the tubing system, greatly aiding in maintaining maximum sap production in the woods.

Types of syrup that we sell

Golden
Delicate Flavor
Color: Light golden to nearly clear.
Flavor: Sweet with a mild to nearly imperceptible maple taste
Uses: Natural sweetener, yogurt, or fruit.

Amber
Rich Flavor
Color: Amber, Golden Amber
Flavor: Rich, noticeable maple taste without being overpowering.
Uses: Pancakes, Waffles, French Toast, Dessert topping.

Dark
Robust Flavor
Color: Rich, Dark 
Flavor: Very strong maple taste.
Uses: Preferred by some for pancakes and waffles but also used in recipes calling for maple flavoring.

Very Dark
Strong Flavor
Color: Very dark to nearly black.
Flavor: Very strong, almost overpowering maple taste.
Uses: Almost exclusively used for cooking requiring maple flavor, stews and barbecue for example.

Syrup has life beyond breakfast!
Eggs can do it, syrup can too!

When you think outside of the waffle box you’ll realize there are actually a lot of uses for maple syrup.
Here are a few examples:
make a fresh salad dressing
substitute for white sugar when baking
add to coffee or tea
make a glaze or marinade for meat
mix up a maple cocktail.
